I'm going to prime my trim (the stuff on the bumpers that has the granular texture) tonight and I want to know how sanded the trim needs to be.  Do I just need to lightly sand it to give it some tooth or sand the stock texture all the way off?

It could be worse.  A woman could cut your penis off while you're sleeping and toss it out the window of a moving vehicle.
-I suppose there's always that.

sand it with no less than 400 grit... maybe 320 but thats pushing it... just gotta sand it to make a bit rough for the primer to stick... also at any auto parts store they sell a primer additive... it helps the primer stick to your bumper...

Or just buy a flexible primer where the additive is already mixed into it so that plastic can bend.
